Pears simmer comfortably in a dry red wine, sugar and cinnamon flavor bath until tender, and then are plated in a delicious chocolate sauce. This Abuelita Poire Belle Helene recipe was inspired by a 19th century French recipe named after an opera. The name means Beautiful Helene Pears. Traditionally it is served with candied violets or sliced almonds but you can use your imagination and garnish with your choice of toppings, if desired.

PELA las peras cuidadosamente, pero deja los tallos intactos. Corta una rebananda delgada de la parte inferior de las peras para que se paren. Colócalas en una olla grande. Añade el vino, el agua, el azúcar y la rajita de canela en la olla.

CALIENTA la mezcla hasta que hierva; cúbrela. Reduce el calor a calor bajo. Cocina, bañando ocasionalmente, durante 20 a 25 minutos o hasta que las peras estén suaves. Saca las peras del líquido.

COLOCA el chocolate Abuelita y la leche evaporada en una cacerola pequeña. Cocina a fuego medio, revolviendo con frecuencia hasta que hierva la mezcla. Deja que hierva, revolviendo constantemente, durante 1 minuto o hasta que la texture quede sin grumos. Divide la salsa entre los 8 platos; coloca una pera en el centro de cada plato. Sírvelas tibias o frías.
