Apple-Filled Sweet Potato Nests
Apple-Filled Sweet Potato Nests are a great new way to serve sweet potatoes at your holiday gatherings! Served with roast turkey, chicken or pork, these are sure to be the start of a new family tradition.

PREHEAT oven to 400° F. Lightly grease baking sheet.
WHIP sweet potatoes until smooth in large mixer bowl. Add eggs, butter, sugar, vanilla extract and nutmeg; beat until well combined. Season with salt.
SPOON mixture onto prepared baking sheet, forming 6 mounds, 2 inches apart. Make a depression in each mound using back of a spoon to form a nest. Fill centers of nests with Harvest Apples.
BAKE for 30 minutes.
*DEFROST Harvest Apples in microwave on MEDIUM (50%) power for 6 to 7 minutes.

Would prefer to use real sweet potatoes instead of canned.

It was not only very simple, but very good and even my husband ate two of them, and that's an accomplishment, since he always says he doesn't care for yams or sweet potatoes. I made this for Thanksgiving. It was wonderful. Very easy to make. I'm ashamed to say I ate most of it before it got to the table. I used real apples which I coated with cinnamon. I also made one with marshmallows in the middle for my son. I highly recommend this dish.
