Banana and Pecan Atole

WHISK together 1 cup water and cornstarch in a medium bowl. Set aside.
HEAT milk, cinnamon stick and sugar in a large saucepan over medium-low heat; do not boil.
PLACE bananas, evaporated milk, pecans, Coffee-mate Original Flavor Liquid and remaining cup of water in blender; cover. Blend until smooth.
ADD banana mixture to the pan. Add vanilla extract and stir slowly to combine ingredients.
ADD cornstarch mixture in a slow stream, stirring frequently until the mixture comes to a boil. Remove from heat.
POUR into serving mugs, garnish with pecans and serve.
