PREHEAT waffle iron according to manufacturer’s directions.
WHISK together flour, sugar, baking powder, baking soda and salt in large bowl.
WHISK together eggs, buttermilk, butter, coffee granules and vanilla extract in a separate large bowl until smooth and coffee granules are dissolved.
ADD buttermilk mixture to flour mixture; stir just until evenly combined and no dry spots remain. Batter may still have a few lumps.
COOK waffles according to manufacturer’s directions, using a scant ¼ cup of batter per waffle. Place waffles on a wire rack between batches to avoid steaming.
FOR WHIPPED CREAM:
BEAT cream, maple syrup and kosher salt in medium mixer bowl until stiff peaks form.
SERVE waffles hot topped with whipped cream, berries and maple syrup.
