Combine morsels, butter, cream, Coffee mate Café Mocha Flavor Liquid, coffee granules and salt in a large, microwave-safe dish. Microwave on HIGH (100%) power for 2 minutes; stir until smooth. Refrigerate for about 3 hours or until firm enough to roll.
Roll into balls using 1 rounded teaspoon per truffle. Place on prepared baking sheet. Refrigerate for 1 hour or until firm.
Combine cocoa powder and cinnamon in a shallow dish. Roll truffles in cocoa mixture. Store in an airtight container in the refrigerator for up to 5 days.
