COOK ground beef in large saucepan over medium heat until brown; drain. Melt 1 tablespoon butter in same saucepan over medium heat. Add onion, carrots, celery and basil; cook, stirring occasionally, for about 10 minutes or until tender. Add broth, potatoes and cooked beef; bring to a boil. Reduce heat to low; cover. Cook, stirring occasionally, for 10 to 12 minutes or until potatoes are tender.

MELT remaining butter in small saucepan over medium heat. Add flour; cook, stirring constantly, for 3 to 5 minutes or until bubbly. Add to soup; bring to a boil. Cook, stirring occasionally, for 2 minutes. Reduce heat to low; add cheese, evaporated milk, salt and pepper. Stir until cheese is melted.

This soup is so wonderful; every time I make it it's gone instantly and my family is asking for more. I write a newsletter for my business and put this soup recipe in it a few years ago; I still have customers commenting on how good it is years later!!

Very yummy and easy recipe! Kids loved it!

This was a great recipe...although I did change it up a bit. I used a nacho cheese sauce made with aged cheddar and I also added hominy. My husband said it was definitely a keeper!

The weather turned off very cold this week, and no one wanted to go out for lunch..so we decided on a day that we would have a soup lunch. I made this in a crock-pot that I brought to work [started it at home the night before], and it just "hit the spot". Some of the younger guys went out and got Pizza to go along with it.

My daughter, who only likes plain hamburgers by the way, loves this soup!! My husband, who hates anything that even resembles healthy loves it as well. I love it b/c I know how many vegetables are in it and it tastes sooooo good!! Thanks!
