Check all


BRING water to a boil in medium saucepan. Add bouillon; stir to dissolve. Reduce heat to medium.

PLACE tomatoes, zucchini, carrot, bell pepper, jalapeño and garlic in food processor; cover. Process until coarsely chopped; add to saucepan. Cook, stirring occasionally, for 15 minutes. Add chicken, corn and cumin; cook, stirring occasionally, for 10 minutes.

SERVE with tortilla strips and cilantro.

Easy, Delicious, Tasteful, Smooth, oh, and did I say Delicious?


This soup was AMAZING!!!!!! Very easy and quick to make. I added black beans for a more southwest kick. Instead of cherry tomatoes, I used zesty diced tomates from the can and they added great flavor as well. I recommend this recipe it yields a lot of food as well. Great family or social meal to serve friends!!!!!


Unlike so many restaurant tortilla soups, which are either overwhelmingly salty or tomatoe-y, this soup has a subtle, spicy aroma with a rich though delicate flavor -courtesy of a plethora of fresh vegetables and cumin. It became an instant family favorite.


This hearty soup is the best! I have made this for Cinco De Mayo parties and everyone loved it. Also my family isn't to keen on vegetables and especially my husband. So it's a way to feed them healthy food and they love it! My daughter had to do a report and she chose to do one on my cooking and picked her favorite food, which of course is this soup! Thanks for having such wonderful healthy food recipes.
