LINE baking sheet with wax paper. Wash strawberries and pat dry thoroughly with paper towels. Set aside.
PLACE chocolate morsels, coffee granules, cream and butter in a heat-resistant medium bowl; mix well. Fill medium saucepan with a few inches of water; bring to a simmer over medium heat. Turn off heat; set bowl of chocolate over hot water to melt. Stir until smooth.
HOLD a strawberry by stem and leaves and dip into chocolate. Shake off excess. Transfer coated strawberry to prepared baking sheet. Repeat with remaining strawberries. Allow chocolate to cool. Refrigerate for 20 to 30 minutes or until chocolate is set.
