HEAT 1 cup cream in a small saucepan over medium heat for about 3 minutes. Do not boil. Stir in Nesquik and peppermint extract until completely dissolved. Set aside to cool.
PLACE remaining 1 ¾ cups cream and sugar in the bowl of a stand mixer. Beat with whisk attachment until stiff peaks form. Fold in chocolate mixture until well mixed. Refrigerate in bowl for 1 hour.
GARNISH with crushed candy canes, sprinkles or a mint sprig before serving.
