Ingredients

Step 1

Preheat oven to 350° F. Grease or paper-line 24 muffin cups.

Step 2

Prepare cake mix batter according to package directions, using 1 ¼ cups water, ½ cup (1 stick) butter and eggs. Dissolve 8 teaspoons coffee granules in 1 tablespoon hot water; stir into batter. Spoon into prepared muffin cups.

Step 3

Bake for 17 to 22 minutes or until wooden pick inserted in cupcakes comes out clean. Cool completely.

Step 4

Dissolve 1 tablespoon coffee granules in remaining tablespoon hot water.

Step 5

Combine powdered sugar, cream cheese, remaining ½ cup (1 stick) butter, coffee mixture and vanilla extract in large mixer bowl; beat until creamy. Frost cupcakes evenly with frosting and decorate with chocolate sprinkles, if desired.
