HAZ hervir el agua de coco en una cacerola mediana a fuego medio. Agrega la sal y el arroz. Reduce el fuego a medio-bajo; pon la tapa. Cocina esto, revolviéndolo de vez en cuando, de 12 a 15 minutos hasta que el agua esté a punto de ser absorbida por completo. Agrega la leche evaporada. Pon la tapa y cocina el conjunto, revolviéndolo de vez en cuando, de 10 a 15 minutos más o hasta que el arroz esté tierno. Puedes agregar más agua en caso de que sea necesaria para conseguir que el arroz tenga la textura necesaria. Retira la cacerola del fuego. Incorpora, al gusto, la ralladura de limón verde, de así desearlo.
