MELT 2 tablespoons butter in medium saucepan over medium heat. Add onion and garlic; cook, stirring occasionally, for 1 to 2 minutes or until onion is tender. Transfer onion mixture to blender. Add red peppers; cover. Blend until smooth.

MELT remaining 2 tablespoons butter in same saucepan. Stir in flour. Gradually stir in evaporated milk and broth. Cook, stirring constantly, until mixture comes to a boil. Stir in red pepper mixture, salt and pepper. Heat through.

this recipe was a winner. I don't keep vegetable broth on hand so I subbed chicken. It was delicious. I will definitely make this again.


This is a winner!! Not too hard to do & my luncheon group loved it! It was almost gone & everyone asked how I made it. This is a keeper!!!! Very creamy & tasty too!!


This soup is absolutely delicious. I gave some to my neighbor and she immediately requested the recipe. Next time I make this soup I might add crabmeat at the end. I highly recommend this soup.


I made this soup and it was delicious. I don't know why I have had a problem with squash soups and the roasted red pepper soups but they are on my #1 list from now on. I can't wait to make it for company. Well it was my son that I had here tonight so I guess he wasn't company. I mean my friends, they think I am a good cook but wait till I make and serve them this soup. Try it, you will love it. I also had porktenderloin and sweet potatoes with it. Great meal!!!


subsitute the butter for cooking spray and make this recipe a bit healthier but just as yummy


This is a very tasty soup. I made this soup over the weekend and used 2% Evaporated Milk and the soup still tasted excellent.


Found the recipe on the Carnation label and made this wonderful soup when my oldest daughter was visiting. I was surprised at the great taste; she raved over it and took the recipe home wanting to make it for her family. She stated they devoured the soup and she put it on the top of her "great soup" list to serve to family and guests. It's easy to prepare, but results in a super tasty and satisfying dish by itself, or as a complement to any meal. (She also takes this to work for lunch.)
