Directions

PLACE potatoes in large saucepan. Cover with water; bring to a boil. Cook over medium-high heat for 15 to 20 minutes or until potatoes are tender; drain.

RETURN potatoes to saucepan. Beat with hand-held mixer for a few seconds to break up. Add evaporated milk and butter; beat until milk and butter are mixed in (some lumps will still be present). Add additional evaporated milk, if a smoother consistency is desired. Stir in cheese. Season with salt and pepper to taste.

I fixed this version of potatoes for my family for Thanksgiving, and my family absolutely loved this take on potatoes.

my whole family just loved the variation on mashed and i was thrilled. it is hard to imagine a meal with plain mashed now.

Great smashed potatoes! I added some shredded cheddar cheese and bacon bits to the potatoes. My family loved it and it has now become one of their favorite dishes!

My family loved these potatoes. I added a 1/2 cup each of shredded cheddar and swiss cheese to give it an extra cheesy taste and just a 1/2tsp of minced garlic for a little extra flavor. It was a hit.

I found the potato mixture very salty. When you decrease the parmesan cheese, you lose that wonderful nutty flavor. I will try a third batch with a milder parmesan.

I was really having a hard time finding a good cheesy potato recipe until I found this one. It was great and the next time I added 1 minced clove of garlic to the boiling water and they were awesome cheesy-garlic potatoes. Thank you for the great recipe.
