COMBINE lime juice, bouillon, oregano, coriander and garlic in a large resealable freezer bag. Add chicken pieces; seal bag. Shake bag gently, pressing with fingers to incorporate juice and seasoning. Marinate in refrigerator for 45 minutes.
HEAT oil in a large pot over medium heat.
ADD sugar and coffee granules; stir rapidly. Sugar will begin to burn slightly.
ADD chicken with marinade; cook, turning chicken frequently, for 10 minutes.
ADD ¼ cup water; cover. Reduce heat to medium-low; cook, stirring frequently, for 15 minutes.
ADD onion, tomatoes, bell peppers and olives. Cover; cook for 10 minutes or until vegetables are cooked through.
ADD tomato sauce and remaining ½ cup water; cover. Reduce heat to low; cook for 10 minutes.
SERVE with cilantro.
TIP: Use chicken breast for a leaner version.
