Easy Cream of Broccoli Soup
Easy Cream of Broccoli Soup is simple and satisfying and can be made in less than an hour. It is a good way to get broccoli into the tummies of fussy eaters. (Great for the lunchbox thermos, too!)

Servings: 6 servings
BOIL water in medium saucepan. Add broccoli; bring to boil. Cover; reduce heat to low. Cook for 5 to 7 minutes or until tender; drain. Place half of broccoli and chicken broth in food processor or blender; cover. Process until smooth.
MELT butter in same saucepan over medium heat. Add onion; cook, stirring occasionally, for 1 to 2 minutes or until onion is tender. Stir in flour. Gradually stir in evaporated milk. Cook, stirring constantly, until mixture comes to a boil. Add broccoli mixture and remaining chopped broccoli. Heat through.

I tried this today on July the 4th! It's a cool damp day in New England. The soup was easy to prepare, but seemed lacking something in the flavour dept. I added salt & pepper in the beginning - so it didn't lack that. Perhaps next time I'll use fresh broccoli. It seemed it didn't taste "broccoli" enough. I even added some locally made white cheddar cheese. Maybe even some bacon will be good cooked with the onion. Still, it was a hearty and satisfying soup!
This soup was fantastic! Easy and quick to make My son loved it. I especially like the use of Evaporated milk rather than cream. I also used fresh broccoli instead of the frozen.
Loved the soup very easy to prepare only thing I will do next time is not puree the broccoli. I like big chunks of broccoli. I also added some carrots just for some color. Hubby liked it too. It did need salt and pepper. I think that's to every ones personal taste. Wonderful soup thank you
I downloaded the recipe for Easy Cream of Broccoli soup and made two batches within a couple of days. It was so good, it went very quickly. I used fresh steamed broccoli instead of the frozen, and it was excellent! This will definately be a staple this winter.
This soup was simple and easy to make. It needed a little extra flavor however, and so I added some salt and pepper. I also put some shredded cheddar cheese on top before serving and that gave the soup additional flavor and color as well.
This soup is so easy to make. It is by far the best yet, and believe me, I have tried many different recipes. The only suggestion I can make is: adding some white cheddar to make the soup even creamier, and serve with some homemade croutons. Yum Yum!!
This WAS easy! I love broccoli soup. It is a nice "winter-y" soup to sit and enjoy! This one was very tasty. (Must have been the butter!) I will definitely make it again!
