Happy 15th Three Milk Cake (Tres Leches)

PREHEAT oven to 375° F. Grease and flour 9-inch springform pan.
BEAT egg whites and 1/4 cup sugar in large mixer bowl until stiff peaks form. Combine egg yolks and remaining sugar in medium bowl; beat until light yellow in color. Fold egg white mixture and flour alternately into egg yolk mixture. Pour into prepared pan.
BAKE for 15 to 20 minutes or just until golden and wooden pick inserted in center comes out clean. Remove from oven to wire rack.
COMBINE sweetened condensed milk, media crema, evaporated milk, brandy and vanilla extract in medium bowl; stir well. Prick top of cake thoroughly with wooden pick. Pour 2 cups cream over cake. Spoon excess cream from side of pan over top of cake. Let stand for 30 minutes or until cake absorbs cream. Remove side of pan.
BEAT cream, sugar and vanilla extract in small mixer bowl until stiff peaks form. Spread over top and sides of cake. Serve immediately with remaining cream.

I thought this was a great addition to my Thanksgiving dinner. My friends from Latin America loved it as it is a special treat for them as well. The funny part about this is I had just moved to a new house and had no idea where the mixer was. Boy, was my arms tired after beating everything for this cake by hand. Now I know how my friend's grandmother’s arms felt after making this delicious cake. I would recommend this cake as it was very tasty, but have your mixer handy.
I never had this before, I made it and my husband went nuts! He loved it! and keeps asking for it. Very impressive cake, your friends will rave about it and what a great baker you are.
I brought this cake to craft night with the girls last evening and everyone said it was really good. Super moist. I used whipped topping that I had on hand instead of the whipping cream. I think if I did it again I would change a couple things. First I would change the time that the cream is allowed to soak into the cake. I would probably just leave it over night to soak in. I noticed that after 45 minutes the cake (when cut) was still a little too wet in my opinion. Secondly, I would go ahead and whip the cream up myself.
