Place 2 cups evaporated milk, rice and sugar in medium, heavy-duty saucepan. Cook, stirring occasionally, over medium-low heat until gently boiling. Cook, uncovered, stirring occasionally, for about 30 minutes or until rice is tender and mixture is thickened.
Remove from heat; stir in sweetened condensed milk and remaining ¼ cup evaporated milk. Scrape out inside of vanilla bean pod; stir into rice pudding. Transfer to serving dishes; serve warm.
