    PREHEAT oven to 400° F. Spray a 9 x 5-inch loaf pan with nonstick cooking spray.

    COMBINE onion, oats, ¼ cup enchilada sauce, jalapeños, bouillon, coffee granules, egg and cilantro in a large bowl.

    ADD ground turkey; mix well.

    PLACE in prepared loaf pan.

  • Step 5 of 8

    COVER with remaining ¾ cup enchilada sauce.

  • Step 6 of 8

    BAKE for 45 minutes or until no longer pink in center. Let stand for 10 to 15 minutes before serving.

    TIP: Control the spice factor on your meatloaf! To make it mild, remove all jalapeño seeds. For a spicier meatloaf, leave in some seeds. Also, for flavor variations use ground beef or ground chicken.

    Serve this meatloaf with a green salad or steamed vegetables for a balanced meal.
