MIX sugar, salt and spice in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.
POUR into pie shell.
BAKE in preheated 425° F. oven for 15 minutes. Reduce temperature to 350° F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream.

This is the only recipe we use for pumpkin pie in our family. My mother's original recipe is so stained you can hardly read it, but the pie always turns out great.
This year for Thanksgiving, my sister and I cooked together. She is usually the one in the family that brings the pumpkin pies. Well, to my surprise she confessed that her "famous" pumpkin pies came from a bakery in the town where she lives. At the last minute, I had to come up with a recipe for pumpkin pie because I had never baked one either. (shame on me) The first thing I did was to get on line and go to this website. It just took a few minutes to find the perfect recipe. Everyone in the family commented on how good my sister's pies were this year.
Great tasting pumpkin pie recipe. So easy and an excellent recipe for those "first pie" bakers to use. You may use 2 regular pie shells instead of a deep dish pie shell and have 2 pies. Divide the pie mixture equally into the two pie shells and bake accordingly.
