Make It
Step 1
Preheat oven to 450° F. Lightly coat a baking sheet or pizza pan with olive oil.
Step 2
Set fry pan to medium-high heat; drizzle with oil. Toss in chopped shallots; sauté for 2-3 minutes. Add Mindful Chik'n and sauté for an additional 5 minutes. Let cool and set aside.
Step 3
Sprinkle counter surface with flour; roll out pizza to desired shape. Transfer to baking sheet or pizza pan.
Step 4
Spread pesto over the dough surface in an even layer with a ½-inch border. Top with Mindful Chik’n, shallots and mozzarella.
Step 5
Place in oven and bake for 15-20 minutes until golden brown and cheese has melted.
Step 6
Season with salt and ground black pepper.
Step 7
Garnish with chopped parsley and red pepper flakes!
