Combine pineapple, pudding mix, yogurt, 1/3 cup coconut and Coffee mate natural bliss Creamer in a blender; cover. Blend until smooth. Transfer to a bowl, cover with plastic wrap and refrigerate for at least 30 minutes.
Heat a small pan over medium heat. Add remaining 1/3 cup coconut and stir continuously until golden brown. Remove from heat.
Garnish dip with toasted coconut. Serve with your favorite fruit to dip.
