COMBINE berries and granulated sugar in small bowl. Combine ricotta cheese and preserves in separate small bowl; mix well. Combine eggs, evaporated milk, brown sugar and vanilla extract in pie plate or shallow bowl; mix well.

SPREAD ricotta-preserve mixture evenly over 6 bread slices. Top with remaining bread slices to form sandwiches.

HEAT small amount of oil in large, nonstick skillet or griddle over medium heat. Dip sandwiches in egg mixture, coating both sides. Cook on each side for about 2 minutes or until golden brown.

SPRINKLE with powdered sugar; top with berries. Serve with maple syrup.

Delicious! I made this on valentines day for my family and they all loved it. Any berries will do and used sugar free preserves. Very rich and delicious!

We have been looking for this recipe for years! My son fell in love with stuffed French toast on a trip to Ensenada when he was little and after trying many versions we nearly gave up on making this at home. But your recipe tasted just like the one he remembers from the resort - THANK YOU! We loved it!

This was just the ticket to get my son to eat French Toast. I have made it the traditional way, dipped in egg with butter and syrup. He would not touch the stuff. He claimed he did not like bread, but eats sandwiches all the time. Well, I made this, told him just give me a chance and try it. He loves it and now ask's for it. yeah!
