COMBINE cake mix, evaporated milk and eggs in large mixer bowl. Beat on low speed for 2 minutes. Stir in 1 cup pineapple. Pour batter into prepared baking pan. Sprinkle with almonds.
BAKE for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 15 minutes.
COMBINE sugar and 2 tablespoons reserved pineapple juice in small bowl; mix until smooth. Spread over warm cake, sprinkle with coconut and remaining pineapple. Cool completely before serving. Top with whipped cream, if desired.

As it is hot and humid in Texas, I was looking for a dessert that is flavorful, short on prep time and makes you feel refreshed. This Tropical Sunshine cake completely hit the spot! Everyone raved how moist it was. Toasted coconut and the pineapple made you feel like on a tropical vacation. Sharing the recipe with all.

I made this at Christmas; even though I did not use the almonds due to a food allergy and no coconut because the store left it out of my order, everyone loved it. I will make this again.
I MADE THIS YESTERDAY FOR MMY SONS SCHOOL FOR TEACHERS APPRECIATION DAY AND RECEIVED ALOT OF COMPLIMENTS, AND I EVEN FORGOT TO ADD THE PINEAPPLE INSIDE THE CAKE MIX AND IT WAS STILL VERY MOIST AND GOOD DIDN'T ADD THE ALMONDS EIGHTER. WILL BE MAKING THIS AGAIN.
This is a very good cake that is great for any party. I really enjoy it with my friends. You should try making it, it is easy!
6OZ OF Evaporated milk and Pineapple will be good enough to moist this cake .
