  • 8 corn tortillas
  • 4 large eggs
  • 2 tablespoons Nestlé® Media Crema
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon vegetable oil
  • 1 cup mild salsa verde
  • 2 tablespoons crumbled Cotija or feta cheese

Make It

Step 1
Spray both sides of tortillas with nonstick cooking spray. Cut each tortilla into 6 wedges. Place in a single layer on a large baking sheet or 2 small baking sheets.
Step 2
Bake at 350° F for 10 minutes. Turn chips over; bake for an additional 5 to 10 minutes or until lightly browned and crisp. Set aside.
Step 3
Whisk together eggs, media crema, salt and pepper in medium bowl.
Step 4
Heat oil in large skillet over medium-high heat. Add egg mixture; cook, stirring frequently, until eggs are cooked through and set. Remove from heat; cover to keep warm.
Step 5
Heat salsa in a large saucepan over medium heat. Add tortillas; stir gently to coat.
Step 6
Divide tortillas between 4 plates. Top evenly with scrambled eggs. Top with any remaining salsa. Drizzle with additional media crema, if desired. Sprinkle with cheese.
