This zucchini and squash salad is the perfect way to enjoy summer vegetables. If summer squash isn't available, just use an extra zucchini. The garlic and lemon flavored vinaigrette make the squash extra flavorful.
Key Ingredients


  • 2 medium zucchini
  • 2 yellow summer squash
  • 2 1/2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 small clove garlic, finely chopped
  • 1/4 teaspoon kosher or sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 handfuls of frisée or arugula
  • Shredded Parmesan cheese (optional)
  • Toasted sliced almonds (optional)
  • Sliced red onion (optional)

Make It

Step 1
Trim ends of zucchini and squash. With a vegetable peeler, shave zucchini and squash lengthwise into a large bowl.
Step 2
Whisk together oil, lemon juice, garlic, salt and pepper in small bowl. Add dressing to bowl with zucchini and squash and toss with hands to coat evenly. Taste and add more salt and pepper if needed. Let stand for 5 minutes so that the zucchini and squash soften.
Step 3
Add frisée to bowl with zucchini and squash and toss gently. Transfer the salad to a serving platter, leaving any watery juices behind. Top with cheese, almonds, and red onions.
