This zucchini and squash salad is the perfect way to enjoy summer vegetables. If summer squash isn't available, just use an extra zucchini. The garlic and lemon flavored vinaigrette make the squash extra flavorful.

Directions

TRIM ends of zucchini and squash. With a vegetable peeler, shave zucchini and squash lengthwise into a large bowl.

WHISK together oil, lemon juice, garlic, salt and pepper in small bowl. Add dressing to bowl with zucchini and squash and toss with hands to coat evenly. Taste and add more salt and pepper if needed. Let stand for 5 minutes so that the zucchini and squash soften.

ADD frisée to bowl with zucchini and squash and toss gently. Transfer the salad to a serving platter, leaving any watery juices behind. Top with cheese and almonds.
