Step 1

Combine coffee granules, sugar, and 1/4 cup water in a small saucepan. Heat over medium-high heat, stirring occasionally, until coffee and sugar dissolve and mixture comes to a simmer.

Stir in cream and remaining 1/2 cup water. Pour mixture into an 8- or 9-inch-square baking pan and set aside to cool to room temperature.

Step 3

Transfer to freezer and freeze for 2 hours, scraping with a fork and smashing any larger clumps every 30 minutes. Freeze until firm, at least 2 hours.

Step 4

Scoop frozen coffee into balls and add to coupe or martini glasses. Combine vodka and liqueur and add to glasses around balls. Add sparkling wine and serve.

Step 5

Note: To vary the recipe, try tonic water instead of sparkling wine.
